how can one find out and certify the number of '87 vw fox that came of the assembly line and what number it was in line?

VIN decoders exist to give info.
The last 6 digits will be a serial number and would have started with 000001 (being the first one off the line).
Whatever your Fox's number is, is what it was on the production line.
