Citi Golf 1.3l 1996 - Stalling issue

Hi there, although my car is old, '96 ive only got 170k on the clock and single owner, unmoded and well kept.

I have replaced the rubber mounting 'gasket' between the Carburetor and the inlet manifold before, as it perishes and sucks in air...I replaced it again last week and ever since then I've been having a strange intermittent issue. Car starts and idles great, warmup a bit with choke, then after 50 degrees remove choke, car idles like a dream about 900rpm and smooth. I can drive it forward and backwards and bring it back to rest no problem, but as soon as I take it out for a drive and go into town, as soon as I roll up to a stoplight or intersection and push in clutch, the car stalls and doesn't want to idle anymore, and even when I do get it to idle, it idles rough, and seeks a lot, sometimes revving up and down and spluttering. in order to get it home ive got to get out a 10 and adjust in the bolt that sets the minimum distance for throttle, to make it rev higher, so it doesnt cut out, but it sounds like im driving with the choke on and it's not right. I'm really confused, I though maybe it might be the vaccum pipe, but that's not it, I've replaced it.

Any ideas or advice or things to look for?

As a follow up, I thought it was a corroded connection on the wire coming from the Solenoid (that cuts off fuel to the carburettor) so it was cutting and then not cutting depending on the contact. But that wasnt it...
Eventually I removed the carb and cleaned it out completely...first time ive cleaned it...the rubber needle still felt good, but there was a bit of gunk buildup in the bowl, i presume from some years I didnt use my car for a few years as I was overseas and I presume evaporated fuel left residue that somehow intermittantly blocked up jects or something...anyway, after a good cleaning with Compression stabaliser and Petrol, its now working right as rain.
