1.4TSI DSG - Fan almost always come on

I have a 2014 Tiguan 1.4 TSI Bluemotion (DSG 118kw)
It drives fine and has no issues, but I am curious as to whether this is normal. Firstly when driving the temperature will be constant between 105 and maybe 111 degrees. Is this the normal range? Seems a bit high?
Another reason I think it may be a bit high, basically always when I stop (unless i drove short distances) the fan will come on as soon as I switch the car off. From what I read people say "its to cool down the turbo", but is it meant to happen basically every time?
I've already had to remove the Catalytic converter because it got 'clogged' (Vw wanted R38k to replace it). The fan and temperature behaviour didnt change before/after changing the cat...
Any ideas/comments on this would be appreciated. Only had the car since January so not sure what is normal. Just never had a car's fan work so much as this one before
