Jetta 5 1.6 BSF Catalytic converter blocked/delete

Hi everyone

I recently noticed a staggering drop of power in my 2010 Jetta 5 1.6, it lined up with a service and cambelt change, so I asked the mechanic to give it a drive and look around because it has no power output at all. I can be doing120 km/h on the highway and come across a decent hill to go over and the speed drops to about 80 km/h, this was not the case before.
Since I had an intermittent EPC issue (Fuel injectors and Throttle body have been replaced), he drove it around and is pretty convinced my catalytic converter is blocked/getting blocked which is causing the lack of power as well as the occasional EPC light. He also drove it without the catalytic converter attached and said there was a world of difference in the power.

My question is should I go ahead with a CAT delete or is there a way to "clean" a CAT, I have heard of the Italian tune-up method which I don't mind giving a go. Also If I go for a CAT delete what do I need to make sure the EPC light or any other check engine lights don't crop up, do I need to use one of the CAT foolers/spacers like the ones below?

If I do go with a CAT delete I want no issues of EPC or check engine lights afterwards.
Has anyone done this ? and what issues did you encounter?

I have had the car now for 3 years and intend on keeping it for a good while more, but these issues with the EPC light and now the loss of power is putting doubt in my mind.

Any help and info is highly appreciated
